Rawon

October 14, 2024

Rawon is a traditional East Javanese black beef soup made with keluak (pangium nuts), beef, and a flavorful blend of spices. It has a deep, earthy taste and is often served with rice, bean sprouts, and salted egg. Despite its complex flavor, a simplified and budget-friendly version can still deliver that authentic Rawon experience.

  • Substitute keluak with a mix of fermented black bean paste and cocoa powder (for color) if keluak is expensive or hard to find.
  • Skip kaffir lime leaves and candlenuts if unavailable.
  • Use cheaper cuts like beef bones with a bit of meat (more broth-heavy version).
